It's low maintenance and abundant harvest make this a \u003c\/span\u003e\u003c\/span\u003e\u003cspan data-huuid=\"3843070187292119839\" class=\"\"\u003e\u003cspan\u003estaple crop on our homestead.\u003c\/span\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWe originally received this variety from Cody Cove Farm and here is what they have to say about it:\u003c\/p\u003e\n\u003cp\u003e\"\u003cspan\u003eTogo is a great cassava variety from West Africa.  For a number of years this has been our standby cultivar due to the high quality of the roots and early production.  This variety produces dense, starchy roots with a very nice flavor and pleasant texture.  Core fiber is minimal.  Unlike some cultivars, even under stressful conditions the roots never become bitter.  Friends from cassava eating cultures have commented on the good eating quality of this variety.  Lack of bitterness indicates this is a “sweet” variety low in HCN (cyanide).  Under our conditions Togo has been a consistent producer provided it is grown with good amendments and occasional water during droughts.  Typically need only 9 months to harvest\u003c\/span\u003e\"\u003cbr\u003e\u003c\/p\u003e\n\u003cp style=\"margin: 0in;\"\u003eWe encourage people to support Cody Cove Farm because they are bringing much needed and incredibly important education regarding sustainable food production in Florida. This incredible perennial vegetable is often called Mayan spinach or tree spinach and is used as a cooked green. Should not be eaten raw. This new variety “Jumbo Leaf” is not yet distributed amongst gardeners in Florida or other warm states. The leaves are exceptionally large compared to more readily available varieties and represents a huge improvement over the old standard types. As shown in the photo, some of the leaves can be as wide as 15 inches! This is a high quality eating variety with leaves being tender. We have worked hard to grow this out as fast as possible to make available because it is very special.\u003c\/p\u003e\n\u003cp\u003eThis Chaya can have some stinging hairs, as is typical of many types of Chaya in Central America. These seem to become more abundant during stress periods such as drought or cool weather. A little caution during harvesting renders these stinging hairs not such a big deal for most people. Cooking eliminates the hairs on the leaves. We find the hairs to be more likely to irritate during pruning or brushing up against the plant rather than during harvest.
